Chocolate & Banana Bread (Vegan & Gluten Free)

5 Minute prep time, 35 mins bake time

500g Buckwheat Flour

4 / 5 Ripe Bananas

½ teaspoon of Baking Soda

1.5 teaspoons of Baking Powder

2 teaspoons of stevia / coconut sugar

4 teaspoons of coconut oil (melt it before blitzing)

1 teaspoon of cinnamon

Dark chocolate (to taste)

I blummin LOVE a chocolate and banana combo and after seeing it posted at least five times over the past week over various feeds I took it as a calling to make some myself. I read through a load of different recipes and got the general jist of what was needing to be done, popped it all in a blender and hoped for the best. Voila!

Preheat oven to 180. Grab your bananas, coconut oil, cinnamon and sugar (or whatever you’re going for here) into a food processor (I used my Blendtec which is like a Vitamix and it worked perfectly). Blitz until you get a creamy paste and then pour out into a bowl (I used a saucepan as I never have any kitchen equipment – note to self, maybe get more?). Add in your flour, baking powder and baking soda and mix in. Then grab your dark chocolate and either just break off chunks and stir in or get yourself some dark chocolate chips. Now pop the mixture into your pre-lined loaf tin (and maybe wedge some more chocolate chunks in on top for good measure, then get your BAKE ON.
